CARACTERIZAÇÃO FÍSICO-QUÍMICA DA POLPA DE SAPOTI ORIUNDA DA REGIÃO DO CEARÁ

A diversificação de frutas exóticas e seu consumo têm proporciona o aumento do cultivo dessas frutas. Dentre elas podemos citar o sapoti (Manilkara sapota L) que pertence a famÃlia Sapotaceae, na qual pode ser aproveitada tanto para oferta de frutas frescas e também como matéria-prima para agroindústria. Portanto, o objetivo desse estudo foi avaliar as caracterÃsticas fÃsico-quÃmicas, da polpa de sapoti oriunda da região do Ceará. O trabalho foi realizado no Laboratório de Processamento e Armazenamento de Produtos AgrÃcolas (LAPPA). As análises fÃsico-quÃmica realizadas foram: teor de água (%), acidez (g/100g), vitamina C (mg/100g) , pH , Aw (%), cinzas(%), sólidos solúveis totais (°Brix), açúcares (totais, redutores e não–redutores em g/100g). Nas quais foram obtidos os respectivos resultados: 72,75 (%); 0,10 (g/100g); 2,24 (mg/100g); 5,43 ; 0,99(%); 0,38(%); 13,67 (°Brix); 5,14; 3,59; 1,55 g/100g . Portanto os parâmetros de acidez e °Brix confere a polpa de sapoti sabor doce. Os demais constituintes quÃmicos podem variar devidos os fatores edafoclimáticas de cada região de onde são oriundos os frutos, diante do exposto a polpa estudada apresentou caracterÃsticas favoráveis para o consumo e comercialização.

The diversification of exotic fruits and consumption have provided increased cultivation of these fruits. Among them we mention the sapodilla (Manilkara sapota L) belongs to the family Sapotaceae, which can be used both to supply fresh fruit and also as raw material for agro-industry. Therefore, the aim of this study was to evaluate the physico-chemical, pulp sapodilla from the region of Ceará. The study was conducted at the Laboratory of Processing and Storage of Agricultural Products (Lappa). The physico-chemical analyzes were performed: water content (%), acidity (g/100 g), vitamin C (mg/100g), pH, Aw (%), ash (%), total soluble solids (° Brix) sugars (total, reducing and non-reducing sugars in g/100 g). In which the results were obtained: 72.75 (%), 0.10 (g/100g), 2.24 (mg/100g), 5.43, 0.99 (%), 0.38 (%) ; 13.67 (° Brix), 5.14, 3.59, 1.55 g/100g. Therefore the parameters of acidity and ° Brix gives pulp sapodilla sweet flavor. The other chemical constituents may vary due to climatic factors in each region where they are from the fruit before the exposed pulp studied had characteristics favorable for consumption and marketing.
