A cozinha sempre foi um espaço feminino. As mulheres, historicamente, foram condicionadas às tarefas domésticas e dominar a culinária era uma delas. Atualmente, os contornos dos fazeres e saberes na cozinha estão atravessados por uma glamourização e profissionalização da culinária, que se deu a partir da atuação masculina. Dominar a “chave” do sistema alimentar, da transformação do alimento, é uma ferramenta de poder que, embora invisibilizado quando em mãos femininas, são saberes e fazeres empíricos das mulheres. Este artigo analisa, a partir da relação com a cozinha de mulheres acolhidas em uma Ocupação em Porto Alegre/RS, o poder e o conhecimento cotidiano das guardiãs de uma cozinha minusculizada pela geração da gourmetização.
The kitchen has always been a female space. Women, historically, were conditioned the housework and culinary was one of them. Currently, the shape of knowledge and knowhow in the kitchen were crossed by glamorization and professionalization of the cuisine, which was based on the male performance. Dominate the “key” of food system, the transformation of food, is a power tool that, while invisible in the women’s hands, is the knowledge and empirical practice of women. This article intends to analyze, from the relationship with the kitchen of sheltered women of a Occupation in Porto Alegre/RS, the power and know daily of the guardian of a kitchen diminished for the generation of glamorization.
