O ferro e essencial na prevenção e tratamento de anemia ferropriva. Cogumelos in natura são produtosperecÃveis e uma alternativa de oferta é o produto desidratado, na forma de farinha. O presente trabalho teve como objetivosavaliar a absorção de doses de ferro em cogumelos da espécie Pleurotus ostreatus (Hiratake) e elaborar farinha destes cogumelos. Ofungo foi cultivado no substrato bagaço de cana de açúcar. O ferro (FeSO4) foi adicionado ao substrato em seis soluções (dosagensde 0; 0,5; 1; 2; 5 e 10 mg Kg

is essential in the prevention and treatment of iron deficiency anemia. Mushrooms are perishable in nature and
offer alternative is the dehydrated product in the form of flour. This study aimed to evaluate the absorption of iron doses of mushrooms of the species Pleurotus ostreatus (Jacq.) P. Kumm. (Hiratake) and elaborate meal of these mushrooms. The fungus was grown on the substrate sugar cane (Saccharum officinarum L.) bagasse. The iron
(FeSO4) was added to the substrate in six solutions (doses of 0, 0.5, 1, 2, 5 and 10 mg Kg-
’). The mushrooms were collected, dried and ground to obtain the flour. They were determined in the flour content of iron (Fe), calcium (Ca), magnesium (Mg) and protein. The increase in Fe doses promoted a significant increase of Fe, Ca and protein, and the dosage of 1.0 mg Kg-’ presented the highest average. It follows that the mushrooms were absorbed and Fe further increase of Ca and protein and the use of enriched with iron mushroom flour is a potential alternative as an aid in preventing and treating anemia.
