O objetivo do presente estudo foi avaliar os efeitos da terapia antineoplásica na alimentação de pacientes com câncer de cabeça e pescoço antes e após o tratamento, utilizando parâmetros gustativos, salivares e dietéticos. Ao comparar as etapas estudadas foi observado que houve alterações no paladar e saliva (p≤0,99) dos pacientes, onde o fluxo salivar mostrou-se correlacionado ao paladar da mesma forma que o pH também passou a influenciar significativamente (p≤0,99) os limiares gustativos destes indivíduos. Também foi possível observar a influência do fluxo salivar entre os sabores doce (p≤0,4925) e salgado (p≤0,403). Durante a análise dietética, observou-se que após o tratamento todos os grupos alimentares foram reduzidos da alimentação, principalmente doces (99,40%), óleos e frituras (99,16%), cereais (71,81%), carnes e ovos (50,65%). Os resultados sugerem que os efeitos adversos decorrentes do tratamento antineoplásico alteram a ingestão alimentar do paciente e que independente das alterações metabólicas da própria doença, os efeitos adversos que ocorrem na cavidade oral estão correlacionados entre si e interferem diretamente na alimentação, levando o paciente a reduzir de forma significativa à quantidade dos alimentos consumidos.

Head and neck carcinomas have increased their prevalence and antineoplastic therapy leads to the appearance of adverse effects that alter the alimentary routine and has an impact on the individual's nutrition, being important the monitoring of the symptoms, in order to improve the quality of life of the patient. The objective of this study was to evaluate the effects of antineoplastic therapy on the diet of patients with head and neck cancer before and after treatment, using gustatory, salivary and dietary parameters. When comparing the studied steps, it was observed that there were alterations in the palate and saliva (p ≤ 0.99) of the patients, where the salivary flow was correlated to the palate in the same way that the pH also influenced significantly (p≤0, 99) the gustatory thresholds of these individuals. It was also possible to observe the influence of salivary flow between sweet (p≤0,4925) and salty (p≤0,403) tastes. During the dietary analysis, it was observed that after the treatment all the food groups were reduced of the feeding, mainly sweets (99.40%), oils and fats (99.16%), cereals (71.81%), meats and eggs (50.65%). The results suggest that the adverse effects resulting from the antineoplastic treatment alter the food intake of the patient and that regardless of the metabolic alterations of the disease itself, the adverse effects occurring in the oral cavity are correlated with each other and interfere directly in the feeding, causing the patient to reduce the quantity of food consumed.
