Com o aumento da criação comercial de abelhas nativas, tem havido um grande interesse pela identificação do
mel oriundo das abelhas sem ferrão, para sua caracterização como alimento e também como agente bactericida. Assim, o
presente estudo tem por objetivo analisar as características físico-químicas do mel de abelhas Melipona scutellaris para a
comparação entre as localidades do Brejo e Litoral (regiões do Estado da Paraíba). Os méis foram avaliados quanto ao seu
potencial de hidrogênio (pH), acidez, grau Brix, índice de refração, umidade, condutividade elétrica, cinzas, açúcares
redutores e sacarose. Conclui-se que o mel da abelha nativa M. scutellaris apresenta valores diferentes dos padrões do
Regulamento Técnico de Identidade e Qualidade do Mel para alguns parâmetros, o que pode dificultar sua
comercialização.

With the increase of the commercial creation of native bees, it has had a great interest for the identification
of the deriving honey of the bees without sting, for its characterization as food and also as bactericidal agent. The present
study it has for objective to analyze the characteristics physicist-chemistries of the honey of Melipona scutellaris bees for
the comparison enters the localities of the Heath and the Coast (regions of the State of the Paraíba). The honeys had been
evaluated how much to its hydrogen potential (pH), acidity, Brix degree, refractive index, humidity, electric
condutividade, leached ashes, reducing sugars and sacarose. One concludes that the honey of native bee M. scutellaris
presents different values of the standards of the Regulation Technician of Identity and Quality of the Honey for some
parameters, what it can make it difficult its commercialization.
