Analytical parameters were established for stevioside standards, as well as their collection and purification, and the methodology for the quantitative determination of steviosides by ultraviolet spectrophotometry was proposed. The quantitative determination of steviosides by spectrophotometry at 208nm using ethyl alcohol as solvent showed good relative precision, with an analytical error of 1.5%. The parameters established in the characterization of the standards were: melting range 197-200 ° C; Rf of the chromatograms around 0.58; maximum absorption peak at 208nm in ethyl alcohol; molar absorptivity greater than 4000 at 208 nm.
